Interview with George’s at Alys Beach Executive Chef Camille Withall
We recently had the opportunity to speak with George’s Executive Chef Camille Withall on a lovely February day in South Walton. Chef Camille graciously shared her story, which began in the Phillippines, as well as the story of George’s restaurant with us. If you’ve not yet dined at George’s in Alys Beach make sure to give it a try next time you’re on 30A. 30A Prime: Thanks for taking time to speak with us today Chef Camille. Please tell us a little about your personal background and how you decided to become a chef.
Chef Camille: I was born and raised in the Philippines. My family loves to cook and eat which is what led me to culinary school. After graduating culinary school I was offered an internship here in Northwest Florida. I immediately fell in love with everything about 30A… The white sand beaches, coastal food, and all-around lifestyle. Ten years later here I am as the Executive Chef at George’s in Alys Beach.
30A Prime: Please tell us about the history of George’s and how it became one of the best restaurants on 30A.
Chef Camille: George’s was originally located in Seagrove Beach. Back in 2008, they literally lifted the building up and transferred it here to Alys Beach. So actually, this year George’s is celebrating its tenth anniversary of being located in Alys Beach.
30A Prime: What makes George’s at Alys Beach stand out from other 30A restaurants?
Chef Camille: George’s is unique because we make everything from scratch. From our stocks to our sauces to how we fabricate our meats to our fresh produce and proteins. All of the ingredients that go into our menu items are locally sourced as much as possible, especially our seafood.
Our menu changes seasonally as well. We change the menu at George’s every spring, summer, fall, and winter. Doing that allows us to try different things and introduce our guests to new ingredients and flavors. So for spring and summer, we try to make food that is more light and colorful. During the cooler months, we’re able to offer our guests more savory, hearty dishes.
Another thing that makes George’s unique is that our menu consists of “Behave and Misbehave” portion sizes. Under the ‘Behave” portion, you get lighter items such as salads and our Abundance Bowl. A few of the salads we serve here at George’s in Alys Beach include; Coconut Curry Chicken Salad, Dab Salad, and George’s Bitter Sweet Salad. The “Abundance Bowl” consists of black beans, red rice quinoa, kale, shiitake, avocado, tomatoes, carrots, blueberries, over easy egg and lemon vinaigrette. Some of the “Misbehave” portion menu items include; Fried Grouper Sandwich, Alys Burger, and Steaks.
One of our more famous dessert menu items is the Warm Chocolate Toffee Goo which is a cross between a cheesecake and a brownie. We top it off with ice cream, chocolate sauce, and chocolate mousse. In terms of gluten-free restaurants on 30A, George’s in Alys Beach is on that list. Our dessert menu caters to people who like gluten-free items. Currently, we have The Hummingbird Cake which is iced with brown butter and edible flowers. It has become one of our most popular desserts here at George’s in Alys Beach.
30A Prime: Please tell us about some of your personal favorite dishes here at George’s.
Chef Camille: One of my favorite dishes right now would be our Pastrami Reuben Sandwich which we smoke in-house. The Pastrami Reuben gives you everything you want in a sandwich… You have your meat you have your cheese you have really good bread. Another favorite George’s menu item of mine is the Seared Sea Scallops served with a bacon tomato chutney and creamed spinach.
A few other fan-favorite items on George’s menu include the Fish Tacos, Sesame Crab Salad, and our Spicy Salt & Pepper Shrimp.
We also have a great selection of wine and beers at George’s that complement all of our menu items.

Chef Camille: Right now the weather here in SoWal is really nice and George’s is such a cute little cottage, so people love to sit outside. We also have indoor dining options which offer a more intimate setting. Our new rooftop viewing deck here at George’s is awesome. It’s a great spot where guest can enjoy their wine and breathtaking views of the Gulf of Mexico.
