Chef Jim Shirley Explains How the Meltdown On 30A became a Top Seaside Food Spot

They specialize in gourmet grilled cheese sandwiches made with the freshest ingredients and lots of love.
Recently, we had the opportunity to speak with the founding owner of Meltdown On 30A, Chef Jim Shirley. In our interview below, Chef Shirley talks about how the Meltdown On 30A sort of serendipitously came to be a Seaside cult classic food trailer. In addition to mouth-watering grilled cheese sandwiches, they also have fire roasted tomato soup and a great selection of local beverages.

30A Prime: Thanks for taking time to speak with us today. Please tell us about the three restaurants you own here in Seaside, FL.
30A Prime: How did the Meltdown On 30A originate?
Chef Jim Shirley: Well it was really interesting… My business partner Kelli Castille and I had been on this kick with grilled cheese. We were making grilled cheese with every type of meat and cheese from all over the world. That had been something we were doing all winter and then this space just so happen to open up. Seaside asked if we had any interesting ideas that we wanted to do… And we said… You know it’s funny you asked that… How about grilled cheese? Not just any grilled cheese but gourmet grilled cheese. So it’s kind of a fun story in terms of how that serendipitously happened.
30A Prime: Please tell us about the ingredients that make up your gourmet grilled cheese sandwiches.
Chef Jim Shirley: Sure… All of our grilled cheese sandwiches are made with fresh bread, freshly sliced gourmet meats and gourmet cheeses. One example would be the Bacon and Brie grilled cheese. We use fresh brie, applewood smoked bacon and serve it on a cranberry walnut bread. It’s just a delicious combination.
30A Prime: What are your Best Sellers at Meltdown On 30A?
Chef Jim Shirley: During the season when the kids are here and this is kind of a cult spot for them, we sell a lot of classic grilled cheese sandwiches. Our classic grilled cheese is made up of American cheese and Texas toast. Another best seller here at Meltdown On 30A is the Smokin’ Turkey. The Smokin’ Turkey is made with fresh sourdough bread, shaved turkey, applewood smoked bacon, avocados, pepper jack cheese and Albuquerque sauce. It’s really good stuff.
30A Prime: Which grilled cheese at Meltdown On 30A is your favorite?
Chef Jim Shirley: You know… Bacon and Brie is great but the B-A-C with bacon, avocado and cheddar is really good because it has bacon jam on it. Bacon jam is something that heaven made.
30A Prime: Please tell us about your Tomato Soup.
Chef Jim Shirley: What better to dip a grilled cheese in than fresh tomato soup? Our tomato soup here at the Meltdown On 30A is made with fire-roasted tomatoes and it’s a classic recipe finished with a little extra virgin olive oil… It is dynamite.
30A Prime: Do you offer any specials?
Chef Jim Shirley: We will run specials, more so in the busy season. Look for breakfast to start up in March. We’ll start serving our wonderful grilled biscuits with the same type of ingredients and will have classic biscuits. However, a Smokin’ Turkey biscuit in the morning makes for a good start to the day.
